Host families are usually only told shortly before arriving. Host familiy changing is well-organized, you will be dropped off/picked up and don't have to worry about anything.
Work
Not much, but your help in and around the house is greatly appreciated.
Excursions
Many, mostly with Young Farmer Club members. Many parties!
Young Farmers/Rural Youth
Many and frequent meetings with Young Farmers members, mostly in the evenings or on weekends at parties or barbecues.
Food
Big amounts, lots of potatoes.

Other
Northern Ireland is still pretty strictly separated between Catholics / Protestants. Many Orange parades. Everyone knows everyone in Northern Ireland!
